Our Bramble Vinegar has the most deliciously rich and perfumed taste of wild Scottish Brambles and is amazing for dressing salads, using as an ingredient when you cook or drinking with sparkling mineral water as a refreshing vinegar spritzer. This is fruit vinegar heaven!
How is it best used?
Its strength of character and taste makes it irresistible when used as a dressing for salads, either on its own or with a little of any of our Extra Virgin Olive Oils.
For something different, try adding it to game or pork dish sauces for a little surprise or with fish as in Glasgow Chef John Quigley's Hot Smoked Salmon recipe.

How is this made?
Our first batch of Bramble Vinegar dates back to 2006 when fruit farmer, talented chef and friend Barbara Burberry, who incidentally invented our Raspberry Vinegar, first brought us a sample of this deliciously rich vinegar.
Barbara suggested that she had only made it for interests sake from the brambles growing wild in the hedgerows around their fruit farm near Comrie. We fell on it with delight and asked her to make it for us.
Sadly Barbara is no longer with us, however, the spirit of her magical creation lives on and it is now made for us by the Sinclair Family on the Dalmeny Estate near Edinburgh.
Like Barbara's original recipe our Bramble Vinegar is made from a simple infusion of fruit, sugar and malt vinegar. Thanks to the preservative qualities of the vinegar and sugar the fruit flavour doesn't need to be sullied with chemical preservatives or additions.
