A delicious taste of sweet gooseberry combines with a sharpness from the vinegar base to make our Gooseberry Vinegar one of the most wonderful dressings for salads in our range.
How is it best used?
Similar to a white wine balsamic, our Gooseberry Vinegar can be used to dress salads on its own or when mixed with a little light Extra Virgin Olive Oil. It is also good for dressing fruit salads too, and seriously delicious over ice cream! Like our other fruit vinegars, it can be used as a cordial. One third fruit vinegar, two thirds sparkling mineral water and a little ice is all you will need to keep the stress of hard day at work at bay.
How is this made?
Kirsten Sinclair makes this vinegar in her kitchen while her Husband John farms their fruit farm. She is assisted by Anne, John's Mother, and together they make quite a jammy team! The Sinclair family have farmed West Craigie Farm on the Dalmeny Estate, since the mid 1960's. Having started growing fruit on the farm in 1980 by 1985 Kirsten started to make jams, chutneys and vinegars with the fruit they grew. Made using only gooseberries, sugar and malt vinegar this has none of the preservatives of commercially bottled products. Instead it relies solely on the preservative qualities of the sugar and vinegar to maintain the quality of this product. This allows the finished product to taste simply, and sublimely, of gooseberries.
