Really smooth, cask aged dark rums are hard to find. Our 3 Year Old Cask Aged Dark Rum is not only smooth despite its strength of 54%, it has what is known as a Barbados Caribbean finish.
The finish is a rich and fruity sweetness of burnt molasses that has produced a melody of sweet caramel on both its nose and in its taste.
How is this best drunk?
Authentic cask strength Rum should be treated a little like a cask strength Single Malt Scotch Whisky, with great respect! The high concentration of molasses make this a delight to sip neat, or with the addition of a splash of good water. It you like your drinks cold, serve over ice or chill just your glass to avoid diluting the magical taste.

How is this made?
Our 3 Year Old Cask Aged Dark Rum is part of a cask that was produced by the Diamond Distillery, which is located in Guyana in the North of South America. Diamond Distillers produce some of the now famous Demerara Region rums where local sugar cane molasses are used to make the rums.
The new make spirit has been aged in an oak barrel for at least 3 years to give it what is called a "Barbados Caribbean finish," similar to a port or sherry finish for a single malt. The darkness has come from the ageing process and the addition of some burnt molasses.
The result of oak ageing spirit rum, a little like Scotch Whisky, is a beautifully smooth rum at cask strength.
